- In a pan heat one tbsp of olive oil. Then put chopped garlic in it. After few second add chopped onion. Saute for 1-2 minutes.
- Then add carrots, beans, capcicum, sweet corn. Cook for 2-3 minutes. Add salt. After few second add Italian seasoning. Mix well. Switch the flame off and let it cool. Add grated cheese and keep aside.
- Take a bowl add olive oil, salt and one egg. Whisk them properly. Then add all purpose flour in it and mix well. Mix gently so that it looks like sand.
- Add little water and knead the dough for 5-7 minutes. Or until it becomes smooth. Put it in refrigerator for 30 minutes.
- Take the dough out from refrigerator and divide it into two halves. Take the first dough put some dry flour on the surface. Then roll the dough into a large thin sheet. Cut it with a heart shaped cookie cutter.
- Apply water on the edges of the heart shaped pasta. Place one spoon of filling at the centre. Then cover it with another pasta. Use a fork to seal the edges.
- Put some semolina on a plate and place the ravioli on it.
- In a pan boil water. Add salt and one tsp of oil. Then drop the ravioli in boiling water. Cook for 2-3 minutes. Or until the pasta starts floating on the top of the pan. Drain them and keep aside.
- To make pan fried ravioli
- In a pan heat 1 tbsp butter. Add chopped garlic in it. When the garlic turns golden then add salt chilli flakes and Italian seasoning. Then put ravioli pasta in the pan. Saute for 1-2 minutes. Gently toss the ravioli and serve.
To make this fragrant base, we sautee a bit of garlic in butter (or olive oil ), then add in the ravioli, baby tomatoes and some fresh basil. Cook ravioli according to package directions; drain and pat dry. In a large skillet over medium heat, brown ravioli in oil in batches until crispy, turning often. Add garlic, salt and pepper while ravioli is frying. Pour vegetable oil and olive oil into a small non-stick frying pan and heat over medium-low heat.
