  4. Add the potatoes and saute until slightly crisp, about 8 minutes. Transfer to a plate.
  5. While cooking the potatoes,add 2 tsp of drippings to a separate skillet and saute pear slices until caramelized and softened, about 8 minutes. Transfer to a plate.
  6. Cook the pear cubes in the second skillet until caramelized and soft about 8 minutes.
  7. Whisk together eggs, milk, salt and pepper.
  8. Add 1 tsp bacon drippings or butter to skillet. Heat over medium heat and add eggs, bacon, pear cubes, potatoes and 2/3 cup cheese.
  9. Stir until eggs begin to set. Top with remaining cheese and pear slices. Garnish with crumbled bacon.
  10. Bake in oven until eggs are fully set about 13 minutes. Serve warm and enjoy!

I don't recommend trying to cut the recipe by more than one-half, since frittatas are inherently a large-batch item. Remove the bacon with a slotted spoon Saute the potatoes in bacon fat.
