This is a very simple recipe which makes a few portions and is great as a make-ahead breakfast or lunch option.   4. Add 1tbp of oil in a pan and pour the egg mixture. Arrange your chips on top of the egg and fry in medium heat,turn the egg to the other side of the pan for an excellent result.
  5. Serve while hot,I served mine with tea.
