  1. Take 2 cup basmati golden rice soaked for 2 hours in water

  12. Take 1/2 cup peas
  13. Make ready 4 green chillies chopped
  14. Prepare 2 medium size diced potato
  15. Get as needed Chopped coriander
  16. Get 6-7 onion cut into thin slices
  17. Prepare 2 tsp ginger garlic paste
  18. Make ready 1 tsp jeera
  19. Make ready to taste Salt
  20. Get 1 tbsp biryani masala paste
  21. Prepare 2-3 strands of saffron soaked in 2 tsp lukewarm milk
  22. Take as needed Desi ghee
  23. Take 1/2 cup cashew
  24. Prepare 2 tbs raisin
  25. Make ready to taste Chat masala
  26. Take slice Some lemon

I have been sharing varieties of Vegetable Biryani recipes for the past few months in my Sunday Lunch recipes series. Usually people make different types of biryani on weekends especially. Vegetable Biryani prepared in a traditional Hyderabadi Dum Biryani style is a Vegetarian's dream come true for enjoying the flavorful slow Vegetable Biryani Recipe (with Step by Step Photos). This hyderabadi veg biryani or hyderabadi vegetable biryani recipe is a slowly cooking method where the preferred vegetables are stir fried and mixed with all the spices to make a sabzi masala, mixed.

Instructions to make Veg Biryani:
  1. First in a pan boil water for rice and add cardamom, bayleaf, clove, black pepper, star anise, cinnamon, salt and give it a good boil.. after that add soaked rice and cook for atleast 10-15 min or 80% cook.
  2. Strain the rice.. add yellow food colour in the starchy water collect from the rice after straining and add 1/4 of cooked rice into it. After 2 min strain that rice also and keep both the rice aside.
  3. In a separate pan add 4-5 tbsp desi ghee and fry onion till it crisp and golden brown. Keep aside. In the same pan fry cashew till golden.. keep aside.
  4. After frying everything in the same pan add jeera(no need to remove ghee) then ginger garlic paste roast it.. add vegetables (you can ads more of your choice), add soya chunks. Add salt as per your taste. Cover it and let it cook for some time. Stir in between to make sure that it would not get burn.
  5. When the veggies get cook then add readymade biryani masala(mix with 3 tsp of water) into it.. give it a good stir and finish it.
  6. Now it's a time for layering the biryani.. tannn tadaan…
  7. I usually take casserole to make sure that it would remain hot at the time of serving.. you can also use bowl instead..
  8. Take a casserole.. first take white rice spread it.. then spread yellow rice over it, some lemon slice, then some cooked veggies, fried onion, cashew, raisin, chat masala, coriander, and 2 tsp of desi ghee.. then set layer 2 as layer 1 over it and the third layer over there..
  9. Finish it with the garnish of saffron and serve hot with curd or raita..
  10. It really taste yumm..
