Ingredients: Aloo (Potatoes) peeled ½ kg small; LAYERING ALOO DUM BIRYANI Once you drain off the water then start to layer, by adding ghee to the bottom of a heavy cooking vessel (the one we use to cook rice).

- Take 1/2 cup milk and add 2 pinch saffron soaked for 2 hours
- Boil water and add 1 cup rice and clove, Bayleaf, cinnamon, oil and salt. Cook them well. When rice cooks well then drain excess water and keep aside to cool.
- Take frying pan and heat 3 tbsp oil and fry long cut onion and deep fry it and remove it in a plate. In the same pan fry small potatoes till golden brown and take it out in a plate.
- Now in the same pan fry some jerra,Bayleaf and onion and fry till brown and add Ginger garlic paste and fry it.
- Now mix tomato puree and cook them and add all masala and mix well and fry it. Then add some water and add potato and cook for 5 minutes and spread green coriander and lemon juice.
- Take another pot first and put one layer of rice and then put other layer of dum aloo and another layer of rice and spread some saffron milk, some fried onion, dum aloo curry and coriander leaves and cover with lid. Cook for 5 minutes.
- Aloo dum biryani ready. Garnish with onion and green coriander and serve hot.
Add a layer of rice and spread evenly. Now add potato layer on the rice layer and spread evenly.
