Steps to make Mutton bombay biryani:
- Clean your mutton first..
- In a bowl add yoghurt, salt, g. G paste, red chilli powder, turmeric..
- Coriander, cumin, all spice and biryani masala and alo bukhara
- Mix well and mutton and leave it for half an hour..
- Heat oil add cardamom, cinnamon, black cloves and bay leaves..
- Chopped 2 tomatoes add in oil.. cook till tender..
- Now add marinated mutton cook for 15 min till oil separate.. bhounfy well till that..
- Now add 2 cup water and cook on low flame until tender..
- When tender add brown onion cook for more 6,8 min and done..
- Soak selah rice for good 2,3 hours..
- In a big pot add salt accordingly to rice, whole spices and potatoes..
- Boil water till potatoes tender..
- When cooked add rice boil. For 10min.. drain and set a side
- Assembling according to my mom way..
- Take gravy oil.. Add in a layering pot first..
- Now layer 1/4 rice and potatoes..
- Add mutton over(mutton with bone on center)masala on sides..
- Then squeeze lemon on too..
- Now layer remaining tomato, coriander and green chillies..
- Then remaining rice and ghee on top..
- In a bowl add food colour and kewra.. mix
- Now pour on top and some brown onion..
- Now do as we do.. put on high flame first.. Then on low flame for 1o min..
- Enjoy with yoghurt and kashumbar..
